THINK OF BUTTERMILK RANCH DRESSING. But think of a really good rendition of the stuff. That’s the cool, calm, collected taste in this recipe, inspired by the work of Nessa and Andrea at Fliphappy Crêpes.
MAKES ABOUT 1 CUP
1 cup (about 4 ounces) crumbled feta ¼ cup buttermilk ¼ cup sour cream ¼ cup mayonnaise 1 clove garlic, peeled and crushed 1 tablespoon white wine vinegar ½ teaspoon salt ¼ teaspoon freshly ground black pepper
Using your hands or a fork, break the feta into small crumbles. Place the buttermilk, sour cream, mayonnaise, garlic, wine vinegar, salt, and pepper in a food processor or blender and puree until smooth. Pour into a container and fold in the feta. The dressing can be refrigerated, covered, for up to 1 week.
